What do you think about choosing a niche? (Which I’m pronouncing “neesh” throughout this piece, btw, being of the Canadian persuasion.)

Does it feel confining?

What about being in a genre? (Another French word with a similar meaning 🙂

Today, we went to Joe’s Diner for lunch.

It is exactly what you’d expect.

Sixteen swivel stools, fixed to the floor, distributed around a Formica countertop that runs the length of the place.

If you’re looking for affordable, greasy breakfast food in a grimy, nostalgic setting, this is it.

They have (by not changing) nailed their genre.

It’s like walking into a time machine.

And yet.

It’s also the best place in town to get bibimbap, bulgogi, and kimchi fried rice.

When the current owners (or management?) took over some years back (before I moved to Fredericton in 2011), the genre, the niche, was already set.

But they also wanted to make Korean food – for their family, for other Korean families in town. (Fredericton is not a large place).

So they did.

Now, even though it’s still a classic 50s/60s diner, it’s also a best-kept-secret Korean home-cooking spot.

Proof that choosing a niche doesn’t mean you can’t also do something else if it makes sense for you.
